Chocolate + Pigs

We took some time out recently to spend an entire day together as a family, do some sight-seeing, and just have fun. Jonathan's remaining time here is drawing short, as his deployment date approaches. We went to Lake Mead to feed the fish and ducks, and we had so much fun with the girls there, I forgot to take any photos. From there, we went to Boulder City and had lunch.

Afterwards, we went to Ethel M Chocolate Factory and Cactus Garden, which is where these first photos are from...

How cute are these Hedgehog cacti?! There were so many different varieties - all beautiful in their own way. The girls enjoyed spotting ones that were local, as well as discovering some from other countries.

Inside the chocolate factory.... The photo above is of the cooling tables, and some of the cookers for the caramels.

Each one of those melting tanks holds 1,000 pounds of chocolate. The girls thought that was awesome, and ooh-ed and ah-ed over those facts.

The cooling tunnel, where the chocolates are run through to cool at just the right temperature after being poured into molds behind the tunnel.

These photos make my heart SO happy. Caroline walked outside of the house for the first time in a year today!! She has been walking short distances at home, and we decided to see if being out and about would encourage her to walk further. She did amazing! And, though she was timid, unsure of herself, and needed a lot of encouragement, she walked about 100 feet through the factory before tiring out. That is such a HUGE accomplishment, considering all she has been through this year!! I am excited to see where she progresses in the coming year...

Next, we went to see the new display at the Bellagio Conservatory and Gardens. This is the same location I talked about in this post.) They had just completed building the new display for Lunar New Year - Year of the Pig - which will be on display until the first week of March.

That black and white area around the water above is made of stones!

Next, we walked across the casino to one of our favorite patisseries, Jean Phillipe Patisserie, to show the girls the chocolate fountain...

And, finally, we watched the Bellagio fountains, and there were many, many squeals of delight - especially from Caroline!
