I wanted to share one of my new favorite morning smoothies today. It is delicious, and the girls love it too!
Date Carmel Apple Smoothie
For the date caramel:
5 very soft Medjool dates, pitted
1/4 cup hot water
1 Tablespoon organic coconut sugar (this is the one I use)
2 Tablespoons organic, extra virgin coconut oil (this is my favorite brand)
1/2 teaspoon organic vanilla extract (this is my favorite organic, Fair-Trade brand)
Pinch of Celtic grey sea salt
For the smoothie:
1 large organic apple, peeled, cored & chopped (I prefer Pink Lady/Honeycrisp varieties. Gala is also good!)
1/4 cup organic apple juice or cider
1 cup organic coconut milk (may substitute with almond, if preferred)
1 scoop Young Living Pure Protein Complete Vanilla Spice (soooooo yummy!)
2 drops Young Living Cinnamon Bark Vitality essential oil
1 cup crushed ice
Place all ingredients for the date caramel in a small blender or food processor and blend until very smooth.
Combine all smoothie ingredients in a high-speed blender (like a Vitamix), and blend until creamy.
Drizzle the date caramel on the inside of 2 cups. Pour the smoothie into the cups, top with more caramel, and serve immediately.
Serves 2. Enjoy!
